These brownies are not for people who like really sugary things. These brownies are for people who are all about the dark chocolate, and prefer them dense, rather than light and airy. They were really good, but I think next time, I will cut them much smaller, because I found it difficult to finish one. In fact? I didn't. But that's OK. It was still everything I wanted in a brownie, and I don't need a huge brownie to be happy.
You will need:
Heat proof mixing bowl
Medium sauce pan of simmering water
whisk
measuring spoons
A decent sized knife
Cutting board that does not smell like onions or anything savory
8 X 8 baking dish
1 sheet parchment paper
Ingredients:
10 ounces, or 284 G of dark chocolate, chopped (reserve 4 oz, or 114 G for stirring in, at the end.)
4 oz, or 114 G Butter.
1/2 C or 100 G fine baking sugar
1 C or 250 G brown sugar (This is packed, so it will weigh more.)
3 eggs (room temperature, please!)
1/4 c, or 25 G cocoa powder.
1/2 tsp salt
1/2 c + 2 tsp, or 80 G flour
Create your water bath on the stove. Fill pan about 1/3 of the way with water, and allow to simmer. Place your bowl on top, with 6 oz, or 170 g of your chocolate. (The rest will be reserved as a stir in, at the end.)

Stir chocolate and butter until butter is melted, and chocolate is mostly melted. Remove from heat, and continue to stir.
Be sure to clean the water off of the bottom of your bowl! Any small bit of water that gets into the melted chocolate will cause it to seize up, and you don't want that!

Stream in your white sugar, salt, and brown sugar. Incorporate well.
Next, add your eggs. Please be sure they are room temperature. It will make a big difference in how this mixture incorporates, going forward.

Add the rest of your ingredients, and stir well.
Grease and line an 8 X 8 baking dish, and add your batter. Bake at 350 F, or 180 C for about 30 minutes.
Allow to cool completely before removing from pan. If you think you can handle it, you can cut these into 8 squares. If you are more like me, I'd suggest 16 squares, because... god damn.
